What an interception counts, how it differs from a tackle, and how to reward reading the game.

What it measures
The player cut out an opposition pass. Unlike a tackle it involves no duel — it is anticipation rather than contact, which is why it is often described as the most positional of the defensive statistics.
How the mainstream game treats it
Not scored directly. Part of the combined clearances-blocks-interceptions counter in the bonus points system, and counts toward defensive contribution.
How to score it in your league
Per N, or inside a milestone. Volume is lower than recoveries and clearances, so a per-action rule is less catastrophic here — but still generous.
A sensible starting value
If scoring it alone, 1 point per 2 interceptions is defensible. Inside a milestone, treat it as equal weight with the other defensive actions.
Watch out for
Interceptions and tackles are frequently double-counted by people building defensive leagues. They are genuinely distinct events, but paying well for both plus recoveries stacks three rewards onto one defensive phase.
